Simply uninstall Twoo from your device and then re-install it from the App Store or Play Store (depending on your device platform). Reconnect your account and this time make sure to leave the settings unchanged.
Another thing would be that the app supports multiple-localization that activates itself when the phone is in a different language other than English.
I see that Windows version doesn't appear to be available anymore which means that you should use Google Chrome to install their extension.
Someone I was chatting with deleted their account from Twoo. I need to recover our conversation because there is some information there that I need. I do not have any way to contact that person now. Is it possible?

Unfortunately, you can't recover a conversation once you didn't save it using the available options in the application. If the conversation ended and the chat was closed, then it's lost forever. You can contact the developers, but I doubt they will give sensitive information to public users without other's permission.
There are two possibilities to recover your account, but you need to choose only one of them:
Use the Password Forgot feature. If the account was removed from phone, then this way you will generate a new password and log-in again while the account remains the same. 1.1 Password Forgot: http://www.twoo.com/login?view=forgot
If your account was deleted/deactivated, then you can try creating it again, although you might need to create one with other name and details. 2.2 Registration URL: http://www.twoo.com/?login=0
I would like to change this "Wants to chat with men between 30 and 40 years old" to "Wants to chat with women between 30 and 40 years old". Doesn't give me any options to do so. Can you help?

You will need to use the options provided by the website. There is no possibility to change the searching filters, because this is the way the website has been designed. Of course, you have the possibility to contact the developer to explain him that you need another filtering category. These filters were implemented based on who they saw the users would perform a search or define themselves for searches from other users.
